Arctic char has a taste that is in between salmon and trout, but leaning more towards the taste of trout. The fish is firm but has a finer flake than either salmon or trout. Due the high fat level, it stays moist. The colour goes from deep red to pink, the taste stays the same.
Arctuc char is a delicious alternative to salmon. Available all year around.
